It is Grade A - Amber Rich Syrup!
Sap collected from our trees has a sugar content of between 1.75 and 3.25%. We process and boil the sap until the sugar content reaches 66 - 67% sugar (brix). That is when it becomes Maple Syrup...It takes roughly 40 gallons of sap to make one gallon of syrup!
